Fancy a Vegan plate that’s different???? Well here you have it!
METHOD:
- Chop 400g of potatoes into chunks
- Add:
- 1/2 tsp cumin seeds
- 1 tsp smoke paprika
- 1/2 tsp dry basil
- 1/2 tsp dry oregano
- 1/2 tsp ground coriander
- 1tsp garlic powder
- 4 cloves garlic, crushed
- 1 small red onion, diced to the potatoes.
- Place ingredients on a baking sheet in the oven till potatoes are crispy.
- Place 1 head of broccoli, cut into florets and add 2 tbsp olive oil the oven till cooked
- Chop a small purple onion, cook on a non stick pan
- Add:
- can of chickpeas, rinsed &drained
- 1/4 cup barbecue sauce
- Salt and pepper to taste
HOW TO MAKE THE PEANUT BUTTER DRESSING
- 2 tbsp of Casberi’s 100% Peanut butter
- 1 tsp soya sauce
- 1 tsp sesame oil
- 2 tbsp lemon juice
- 3 tbsp water
